Lemon Jello Cake



This cake always reminds me of Spring.  It is a wonderful cake for any Spring event like Easter, bridal or baby showers, birthday, graduations, or Mother's day.  I like it because I can make it a day ahead.


First, bake a white or yellow cake mix into two 9inch layer cakes.  Just follow the directions on the box and bake and cool as directed.  After removing the layers from the pans, wash the pans and place the cooled cakes back into them.  Poke holes into the cake with a fork (I use a meat fork that has large tines).



Mix 2 small boxes of lemon jello with 2 cups of boiling water and stir for 2 minutes. 



Pour Jello evenly over the two layers.  It's OK if you see little puddles of jello.  Cover the pans with plastic wrap and put into fridge.  You can make these layers several day in advance.  I like to frost the cake on the day I'll be serving it.  To get the layers out of the pans, let them sit in a pan (or kitchen sink) filled with 1/2 of warm/hot water for about 10 seconds.  Then, simply run a knife around the edge and tip it over pop out the cake.



Frost the cake with the Cool Whip.  First frost the bottom layer and then top with the second layer.  Be careful because the top layer likes to slide around.  For extra fun, you can add sliced strawberries to the middle layer.


Here's what the finished cake looks like.  (sorry for the bad lighting - I was frosting this at 5:30 AM on Easter morning!)

I like to add pansies from my garden and a bit of fresh mint.  I only fertilize with organic fertilizers and I wash the flowers and dry them before placing them on the cake.  You can also use thinly sliced lemons for decoration.

You can make this cake in a 9x13 inch pan.  Just follow the baking directions on the box of cake mix and adjust the directions to fit the larger, single layer.

  2. Thanks for posting this recipe. I have downloaded it about five times, and can never find it. I plan to make it for Easter. Your cake looks just beautiful! Since we just got 9 inches of snow :-( I think I'll put fancy candy lemon wedges on top. jj

A Designer's Secret For A Taller Bed

  Several years ago Hubs and I spent almost a year looking for a bedroom set that we both loved.  He wanted clean lines and dark wood.  I wanted curves and a "tall" bed.  Of course, there was no perfect bedroom set but we were able to compromise on a set that we both liked.  My main wish was for a bed that I could "climb up into".  The problem with that wish was that most of the "tall" beds were four poster beds and Hubs was not in the mood for that.  We found a Thomasville bed on display at a local furniture store and it fit the clean lines that Hubs wanted and it was "tall"  enough to suit me.  The problem was that once we received the bed we ordered in our home, it wasn't as tall as I had remembered it being.  My heart sunk!  I went back to the furniture store to look at the display.  Their bed was much taller than our bed.  Hmmm. . . what was different? Plans For A DIY Exercise Bike Stand

  Thank you to so many of you who emailed me about plans for the DIY Exercise Bike Stand .  I apologize that it has taken me so long to get the measurements to you, but they are finally here!   The wood was purchased at Home Depot and the bike pegs were purchased at Walmart in the bike section.    The bike we used for this project is a 24" 12 speed bike (I'm a shorty).  I used the hardest gear while riding, but this set-up does not allow you to really get much resistance (for building muscle).  It was great for getting my legs moving after some nerve damage.  I also wanted to burn calories and get my heart rate up and this did the trick.    If you have any questions, just shoot me an email.
